Compound protease enzyme for juice and beer processing for clearer liquid

Sunhy Clearzyme is a food-grade liquid enzyme that is extracted from papayas. It has a high enzyme purity and a clear and transparent appearance. It can be used in the beer and juice processing industry, such as eliminating the turbidity caused by pulps in juice, improving the filtering of juice, and increase the clearness in beer.

Characteristics

Effective pH range: 3.0-7.5; optimal pH range: 4.5-6.0

Effective temperature range: 20~70℃; optimal temperature range: 50~60℃

Benefits

- Increase juice yield by hydrolyzing the proteins in the pulp;

- Decrease the trace protein in the juice, thus increase the stability;

- Degrade the trace protein in the beer, thus prevent turbidity, and increase the stability of the beer.

Application

The recommended dosage is 5-10g per ton of pure beer or juice. The amount should be adjusted accordingly based on the production conditions.

Dilute the enzyme by water (5 to 10 folds), and add directly to wort or juice. Mix well.

Storage

Store in a cool, dry, and ventilated place. Avoid direct sunlight. A storage temperature of 0℃~10℃ can extend shelf-life.

12 months at room temperature (25℃)

Safety

Avoid inhaling enzyme powder. Rinse immediately for 15 minutes with water if contact with skin or eyes.
